  1. Brown the cheeks in a casserole with oil, add onions and chopped garlic, bouquet garni, stir 5 minutes, then sprinkle with flour, salt, pepper and moisten with broth or water.
  2. Cover the casserole and simmer on very low heat 1:30.
  3. Peel the potatoes, cut them into slices.
  4. 30 min before the end of cooking, add the chocolate, potatoes and cook. Add a little liquid in the pan if necessary.
